Have I ever told you I love fall?
Yep. It’s my favorite season of all. I love everything about it, well, except football. But even that’s ok sometimes. I love the crisp smell in the air, the leaves as they turn all the different shades of yellows and reds. I love the fall fashion lines of sweaters, boots, and scarves. I love getting out my scary wicked witch costume, and all the other million Halloween decorations I have stored away. Is September 15th too early to decorate? Nope.
I love my kids getting back on a schedule, and myself with them. But most of all I love the foods. I mean who doesn’t love the taste of pumpkin in EVERYTHING? I can’t get enough of it. Pumpkin is my favorite food that starts with a P. Pizza is next. (gluten free, and healthy of course ). Anyway back to pumpkin. It’s just delicious. The sight of all those yummy recipes on Pinterest, make my mouth water and my self-control weaken. It’s a good thing I don’t have a short order chef just hanging around waiting for me to shout, MAKE ME PUMPKIN. I would keep him pretty busy.
But, as much as I love pumpkin and fall foods, I also love being lean, fit, and able to walk into my closet and know that any outfit I choose will look great.
That alone is worth forfeiting most of the tasty pumpkin treats coming my way each fall. The few treats I do allow myself to indulge in are pumpkin soufflé, protein pumpkin pancakes, and protein pumpkin shakes. Ok and once in awhile a pumpkin spiced latte…or two.
I had to learn to keep my love for fall within my boundaries for health, well and honestly budget – I mean all the clothes. Moms need back to school clothes too!
To battle my cravings, as far as food was concerned, I created enough fall favorite recipes to keep me happy, satisfied and still in love with fall.
During September & October,
I will be sharing all of my favorite fall recipes!
I would love to hear what yours are. If you would like to share them, they just need to be under 500 calories per meal, and 200 for desserts or snacks. We will share them on our social media sites with credit to you, the chef! Just make sure they are your own, or credit where you found them from.
The first recipe I will share is one my mom used to make for our family when I was growing up, and I’ve adapted it to fit the LeanMoms lifestyle. My kids love it, and it’s one of those comfort foods that just make a perfect ending to a fall day.
Enjoy and don’t forget to pin the recipe so you have it forever!
